Our conifer needles are selectively and ethically collected from the northern forests of Vermont, infused in VT organic apple cider vinegar for a sufficiently long time to achieve a taste similar to a balsamic vinegar with a healthy dose of vitamin C for good measure. Each variety lends their own unique flavor...Eastern White Pine is more mild, Spruce is more aromatic similar to Rosemary, and Balsam seems the sweeter.
